Beef Stroganoff
Ingredients (4 servings)
500 g beef sirloin or tender cut, sliced thin
2 tbsp butter + 1 tbsp oil
1 onion, sliced
250 g mushrooms, sliced
2 garlic cloves, minced
1 tbsp flour
200 ml beef stock
200 ml sour cream
1 tbsp Worcestershire sauce or Dijon mustard
Salt & pepper
Parsley for garnish
Serve with egg noodles or rice
Instructions
Season beef with salt & pepper. In a large pan, heat butter + oil; brown beef quickly over high heat; remove and set aside.
In same pan, sauté onion, mushrooms until soft; add garlic.
Stir in flour, cook ~1 minute, then add beef stock, scraping bottom.
Return beef to pan; simmer gently few minutes.
Stir in sour cream & Worcestershire sauce (or mustard); warm through but do not boil.
Serve over noodles or rice; garnish with parsley.
