Beef Stroganoff

Ingredients (4 servings)

  • 500 g beef sirloin or tender cut, sliced thin

  • 2 tbsp butter + 1 tbsp oil

  • 1 onion, sliced

  • 250 g mushrooms, sliced

  • 2 garlic cloves, minced

  • 1 tbsp flour

  • 200 ml beef stock

  • 200 ml sour cream

  • 1 tbsp Worcestershire sauce or Dijon mustard

  • Salt & pepper

  • Parsley for garnish

  • Serve with egg noodles or rice

Instructions

  1. Season beef with salt & pepper. In a large pan, heat butter + oil; brown beef quickly over high heat; remove and set aside.

  2. In same pan, sauté onion, mushrooms until soft; add garlic.

  3. Stir in flour, cook ~1 minute, then add beef stock, scraping bottom.

  4. Return beef to pan; simmer gently few minutes.

  5. Stir in sour cream & Worcestershire sauce (or mustard); warm through but do not boil.

  6. Serve over noodles or rice; garnish with parsley.
