Chicken Noodle Soup

Ingredients (6 servings)

  • 2 chicken breasts (or whole chicken pieces)

  • 2 tbsp oil

  • 1 onion, chopped

  • 2 carrots, sliced

  • 2 celery stalks, sliced

  • 2 garlic cloves, minced

  • 8 cups chicken broth

  • 1 tsp thyme

  • 150-200 g egg noodles

  • Salt & pepper

  • Parsley for garnish

Instructions

  1. In large pot, heat oil; sauté onion, carrots, celery until soft; add garlic.

  2. Add chicken pieces; pour in broth; bring to boil.

  3. Reduce heat, simmer until chicken is cooked (~15-20 min). Remove chicken; shred.

  4. Add noodles to pot; cook until tender. Return chicken to soup.

  5. Season with salt, pepper, thyme. Garnish with parsley.
