Chicken Noodle Soup
Ingredients (6 servings)
2 chicken breasts (or whole chicken pieces)
2 tbsp oil
1 onion, chopped
2 carrots, sliced
2 celery stalks, sliced
2 garlic cloves, minced
8 cups chicken broth
1 tsp thyme
150-200 g egg noodles
Salt & pepper
Parsley for garnish
Instructions
In large pot, heat oil; sauté onion, carrots, celery until soft; add garlic.
Add chicken pieces; pour in broth; bring to boil.
Reduce heat, simmer until chicken is cooked (~15-20 min). Remove chicken; shred.
Add noodles to pot; cook until tender. Return chicken to soup.
Season with salt, pepper, thyme. Garnish with parsley.
