A rich, comforting vegan dish that delivers indulgent flavor in every bite — earthy mushrooms bathed in creamy garlic sauce.
Ingredients
400 g (14 oz) mixed mushrooms (king oyster, cremini, or button)
2 tbsp olive oil
3 cloves garlic, minced
1 small onion, finely chopped
1 cup plant-based cream (or heavy cream if not vegan)
½ cup vegetable broth
1 tbsp soy sauce
1 tsp thyme
Salt and black pepper to taste
Fresh parsley, chopped
Instructions
Sauté the Aromatics:
Heat olive oil in a large skillet. Add onions and garlic; cook until fragrant.Cook the Mushrooms:
Add mushrooms and sauté 6–8 minutes until they release their moisture and start to brown.Make it Creamy:
Stir in soy sauce, broth, thyme, and cream.
Simmer for 10 minutes until thick and silky.Finish and Serve:
Season with salt and pepper, sprinkle parsley, and serve over mashed potatoes, pasta, or rice.
