A rich, comforting vegan dish that delivers indulgent flavor in every bite — earthy mushrooms bathed in creamy garlic sauce.

Ingredients

  • 400 g (14 oz) mixed mushrooms (king oyster, cremini, or button)

  • 2 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 small onion, finely chopped

  • 1 cup plant-based cream (or heavy cream if not vegan)

  • ½ cup vegetable broth

  • 1 tbsp soy sauce

  • 1 tsp thyme

  • Salt and black pepper to taste

  • Fresh parsley, chopped

Instructions

  1. Sauté the Aromatics:
    Heat olive oil in a large skillet. Add onions and garlic; cook until fragrant.

  2. Cook the Mushrooms:
    Add mushrooms and sauté 6–8 minutes until they release their moisture and start to brown.

  3. Make it Creamy:
    Stir in soy sauce, broth, thyme, and cream.
    Simmer for 10 minutes until thick and silky.

  4. Finish and Serve:
    Season with salt and pepper, sprinkle parsley, and serve over mashed potatoes, pasta, or rice.
