Hearty Veggie Soup (Zero Waste Style)
A warm, nourishing soup that uses leftover veggies to create a comforting classic — perfect for cozy nights.
Ingredients
4 cups mixed vegetable scraps (carrot peels, celery ends, onion skins, etc.)
2 medium potatoes, diced
1 cup chopped carrots
1 cup chopped celery
2 garlic cloves, minced
8 cups water or vegetable stock
1 bay leaf
1 tsp salt
½ tsp black pepper
1 tsp herbs de Provence (or thyme + rosemary mix)
Instructions
Make the Broth:
Place all vegetable scraps, water, bay leaf, and garlic in a large pot.
Simmer for 45 minutes, then strain and discard scraps.Cook the Soup:
Add diced potatoes, carrots, celery, herbs, salt, and pepper to the broth.
Simmer 25–30 minutes until vegetables are tender.Finish & Serve:
Adjust seasoning to taste.
Serve hot with crusty bread or grated cheese on top for comfort.
