Hearty Veggie Soup (Zero Waste Style)

A warm, nourishing soup that uses leftover veggies to create a comforting classic — perfect for cozy nights.

Ingredients

  • 4 cups mixed vegetable scraps (carrot peels, celery ends, onion skins, etc.)

  • 2 medium potatoes, diced

  • 1 cup chopped carrots

  • 1 cup chopped celery

  • 2 garlic cloves, minced

  • 8 cups water or vegetable stock

  • 1 bay leaf

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp herbs de Provence (or thyme + rosemary mix)

Instructions

  1. Make the Broth:
    Place all vegetable scraps, water, bay leaf, and garlic in a large pot.
    Simmer for 45 minutes, then strain and discard scraps.

  2. Cook the Soup:
    Add diced potatoes, carrots, celery, herbs, salt, and pepper to the broth.
    Simmer 25–30 minutes until vegetables are tender.

  3. Finish & Serve:
    Adjust seasoning to taste.
    Serve hot with crusty bread or grated cheese on top for comfort.
