Lemon Butter Cookies

Soft, buttery, and sweet — these cookies bring a taste of home with a comforting touch of lemon zest.

Ingredients

  • 1 cup unsalted butter, softened

  • ¾ cup sugar

  • 1 egg yolk

  • 2 cups all-purpose flour

  • Zest of 1 lemon

  • 1 tsp vanilla extract

  • Pinch of salt

  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C).
    Line a baking sheet with parchment paper.

  2. Mix the Dough:
    In a bowl, cream butter and sugar until light and fluffy.
    Add egg yolk, vanilla, lemon zest, and salt.
    Gradually add flour and mix until smooth dough forms.

  3. Shape & Chill:
    Roll dough into small balls or use a cookie cutter.
    Chill 20 minutes in fridge for best texture.

  4. Bake:
    Bake 12–15 minutes or until edges turn golden.
    Cool on a rack and dust with powdered sugar.
