Light Coconut Vegetable Curry
🍛 Ingredients (4 servings)
1 onion
2 garlic cloves
1 small ginger piece (2 cm)
1 eggplant
1 zucchini
1 bell pepper
1 cup green peas
¾ cup light coconut milk
¾ cup vegetable broth
1 tbsp curry paste or powder
1 tsp turmeric
Salt & pepper
Cilantro for garnish
👩🍳 Instructions
Sauté onion, garlic & ginger in olive oil.
Add curry paste and spices.
Add chopped veggies and stir for 3–4 min.
Pour coconut milk & broth, simmer 15–20 min.
Add peas near the end.
Garnish with cilantro and serve with brown rice.
💡 Add tofu or lentils for more protein.
