Light Coconut Vegetable Curry

🍛 Ingredients (4 servings)

  • 1 onion

  • 2 garlic cloves

  • 1 small ginger piece (2 cm)

  • 1 eggplant

  • 1 zucchini

  • 1 bell pepper

  • 1 cup green peas

  • ¾ cup light coconut milk

  • ¾ cup vegetable broth

  • 1 tbsp curry paste or powder

  • 1 tsp turmeric

  • Salt & pepper

  • Cilantro for garnish

👩‍🍳 Instructions

  1. Sauté onion, garlic & ginger in olive oil.

  2. Add curry paste and spices.

  3. Add chopped veggies and stir for 3–4 min.

  4. Pour coconut milk & broth, simmer 15–20 min.

  5. Add peas near the end.

  6. Garnish with cilantro and serve with brown rice.

💡 Add tofu or lentils for more protein.
