Macaroni and Cheese (Classic Baked)

Ingredients (4–6 servings)

  • 300 g elbow macaroni

  • 50 g butter

  • 50 g all-purpose flour

  • 600 ml whole milk

  • 200 g cheddar cheese, grated

  • 100 g mozzarella or Gruyère, grated

  • 1 tsp mustard powder (optional)

  • Salt & black pepper

  • For topping: 30 g breadcrumbs + a knob of butter

Instructions

  1. Preheat oven to 190 °C (375 °F).

  2. Cook macaroni in salted boiling water until al dente, drain, set aside.

  3. In a saucepan, melt butter, stir in flour to make a roux, cook ~1 minute.

  4. Slowly whisk in milk, stirring until sauce thickens.

  5. Remove from heat, stir in mustard powder, salt, pepper, cheddar & half the mozzarella.

  6. Mix sauce with macaroni; pour into a baking dish.

  7. Top with remaining cheese and breadcrumbs. Dot breadcrumbs with butter.

  8. Bake ~20-25 minutes until golden and bubbly.
