Meatloaf with Mashed Potatoes

Ingredients (5–6 servings)

  • For meatloaf:

    • 700 g ground beef (or mixed beef & pork)

    • 1 onion, finely chopped

    • 2 garlic cloves, minced

    • 1 carrot, grated

    • 1 egg

    • 50 g breadcrumbs

    • 2 tbsp milk

    • 2 tbsp ketchup or tomato sauce

    • 1 tsp Worcestershire sauce

    • Salt & pepper

  • For mashed potatoes:

    • 1.2 kg potatoes, peeled & chopped

    • 60 g butter

    • 100-150 ml milk

    • Salt & pepper

Instructions

  1. Preheat oven to 180 °C (350 °F).

  2. In a bowl, mix ground meat, onion, garlic, carrot, egg, breadcrumbs, milk, ketchup, Worcestershire, salt & pepper.

  3. Shape into loaf; place in loaf pan or baking dish.

  4. Bake ~1 hour until internal temp is safe and loaf is browned.

  5. Meanwhile cook potatoes, mash with butter, milk, salt & pepper.

  6. Slice meatloaf and serve with mashed potatoes.
