Meatloaf with Mashed Potatoes
Ingredients (5–6 servings)
For meatloaf:
700 g ground beef (or mixed beef & pork)
1 onion, finely chopped
2 garlic cloves, minced
1 carrot, grated
1 egg
50 g breadcrumbs
2 tbsp milk
2 tbsp ketchup or tomato sauce
1 tsp Worcestershire sauce
Salt & pepper
For mashed potatoes:
1.2 kg potatoes, peeled & chopped
60 g butter
100-150 ml milk
Salt & pepper
Instructions
Preheat oven to 180 °C (350 °F).
In a bowl, mix ground meat, onion, garlic, carrot, egg, breadcrumbs, milk, ketchup, Worcestershire, salt & pepper.
Shape into loaf; place in loaf pan or baking dish.
Bake ~1 hour until internal temp is safe and loaf is browned.
Meanwhile cook potatoes, mash with butter, milk, salt & pepper.
Slice meatloaf and serve with mashed potatoes.
