Mediterranean Chickpea Salad

🥗 Ingredients

  • 1 can (15 oz) chickpeas, rinsed & drained

  • 1 cucumber, diced

  • 2 ripe tomatoes

  • ½ red onion

  • 1 bell pepper

  • 10 black olives

  • 2 tbsp chopped parsley

  • 1 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp red wine vinegar

  • Salt & pepper

👩‍🍳 Instructions

  1. Mix all chopped vegetables and chickpeas in a bowl.

  2. Add olives and parsley.

  3. In a small bowl, whisk olive oil, lemon juice, vinegar, salt & pepper.

  4. Pour dressing over and toss well.

  5. Let rest 15 minutes before serving.

💡 Add feta cheese or quinoa for a complete meal.
