Mediterranean Chickpea Salad
🥗 Ingredients
1 can (15 oz) chickpeas, rinsed & drained
1 cucumber, diced
2 ripe tomatoes
½ red onion
1 bell pepper
10 black olives
2 tbsp chopped parsley
1 tbsp olive oil
1 tbsp lemon juice
1 tsp red wine vinegar
Salt & pepper
👩🍳 Instructions
Mix all chopped vegetables and chickpeas in a bowl.
Add olives and parsley.
In a small bowl, whisk olive oil, lemon juice, vinegar, salt & pepper.
Pour dressing over and toss well.
Let rest 15 minutes before serving.
💡 Add feta cheese or quinoa for a complete meal.
