Power Quinoa & Roasted Veggie Bowl

🥗 Ingredients (2–3 servings)
1 cup quinoa
1 zucchini
1 red bell pepper
1 carrot
1 red onion
1 tbsp olive oil
1 garlic clove (minced)
½ tsp ground cumin
Salt & black pepper
1 cup kale or spinach
½ cup cooked chickpeas
Dressing: juice of ½ lemon, 1 tsp mustard, 1 tbsp olive oil, salt & pepper
👩🍳 Instructions
Preheat oven to 400°F (200°C).
Cut veggies into bite-size chunks. Place on a tray, drizzle with olive oil, garlic, cumin, salt & pepper.
Roast 20–25 minutes until soft and golden.
Rinse quinoa and cook in 2 cups of water (or broth) for 15 minutes until fluffy.
Mix quinoa, roasted veggies, chickpeas, and greens in a bowl.
Whisk dressing and pour over. Toss well and serve warm or cold.
💡 Add grilled chicken, tofu, or seeds for extra protein.
