Power Quinoa & Roasted Veggie Bowl

HEALTHY & NUTRITIOUS RECIPES

🥗 Ingredients (2–3 servings)

  • 1 cup quinoa

  • 1 zucchini

  • 1 red bell pepper

  • 1 carrot

  • 1 red onion

  • 1 tbsp olive oil

  • 1 garlic clove (minced)

  • ½ tsp ground cumin

  • Salt & black pepper

  • 1 cup kale or spinach

  • ½ cup cooked chickpeas

  • Dressing: juice of ½ lemon, 1 tsp mustard, 1 tbsp olive oil, salt & pepper

👩‍🍳 Instructions

  1. Preheat oven to 400°F (200°C).

  2. Cut veggies into bite-size chunks. Place on a tray, drizzle with olive oil, garlic, cumin, salt & pepper.

  3. Roast 20–25 minutes until soft and golden.

  4. Rinse quinoa and cook in 2 cups of water (or broth) for 15 minutes until fluffy.

  5. Mix quinoa, roasted veggies, chickpeas, and greens in a bowl.

  6. Whisk dressing and pour over. Toss well and serve warm or cold.

💡 Add grilled chicken, tofu, or seeds for extra protein.
