Sheet Pan Gnocchi with Leeks and Gouda

  • Ingredients:

    • 500g store-bought gnocchi

    • 2 leeks, sliced

    • 200g cherry tomatoes

    • 1 can (400g) white beans, drained and rinsed

    • 200g Gouda cheese, shaved

    • 2 tbsp olive oil

    • Salt and pepper to taste

  • Instructions:

    1. Preheat the oven to 200ยฐC (400ยฐF).

    2. On a parchment-lined sheet pan, toss gnocchi, leeks, cherry tomatoes, and white beans with olive oil, salt, and pepper.

    3. Spread the mixture evenly and roast for 25โ€“30 minutes, stirring halfway through.

    4. In the last 5 minutes, sprinkle shaved Gouda over the top and return to the oven until melted and golden.

    5. Serve warm, garnished with fresh herbs if desired.
