Sheet Pan Gnocchi with Leeks and Gouda
Ingredients:
500g store-bought gnocchi
2 leeks, sliced
200g cherry tomatoes
1 can (400g) white beans, drained and rinsed
200g Gouda cheese, shaved
2 tbsp olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 200°C (400°F).
On a parchment-lined sheet pan, toss gnocchi, leeks, cherry tomatoes, and white beans with olive oil, salt, and pepper.
Spread the mixture evenly and roast for 25–30 minutes, stirring halfway through.
In the last 5 minutes, sprinkle shaved Gouda over the top and return to the oven until melted and golden.
Serve warm, garnished with fresh herbs if desired.
