Slow-Cooked Lentil & Sweet Potato Soup

🥣 Ingredients (4 servings)

  • 1 cup lentils (green or red)

  • 1 medium sweet potato

  • 1 onion

  • 2 garlic cloves

  • 1 carrot

  • 1 celery stalk

  • 1 tomato (or ¾ cup crushed tomatoes)

  • 4 cups vegetable broth

  • ½ tsp turmeric

  • ½ tsp cumin

  • 1 tsp paprika

  • Salt & pepper

  • 1 tbsp olive oil

  • Optional: parsley or cilantro

👩‍🍳 Instructions

  1. Dice all vegetables.

  2. In a pot, heat olive oil and sauté onion, garlic, celery, and carrot.

  3. Add sweet potato, tomato, and spices. Stir.

  4. Add lentils and broth, bring to a boil, then simmer 25–30 minutes.

  5. Blend partially for a creamy texture.

  6. Garnish with parsley or cilantro.

💡 Add spinach or chili for a spicy kick.
