Slow-Cooked Lentil & Sweet Potato Soup


🥣 Ingredients (4 servings)
1 cup lentils (green or red)
1 medium sweet potato
1 onion
2 garlic cloves
1 carrot
1 celery stalk
1 tomato (or ¾ cup crushed tomatoes)
4 cups vegetable broth
½ tsp turmeric
½ tsp cumin
1 tsp paprika
Salt & pepper
1 tbsp olive oil
Optional: parsley or cilantro
👩🍳 Instructions
Dice all vegetables.
In a pot, heat olive oil and sauté onion, garlic, celery, and carrot.
Add sweet potato, tomato, and spices. Stir.
Add lentils and broth, bring to a boil, then simmer 25–30 minutes.
Blend partially for a creamy texture.
Garnish with parsley or cilantro.
💡 Add spinach or chili for a spicy kick.
