Spinach, Mushroom & Tomato Omelet

🍳 Ingredients

  • 4 eggs

  • 1 cup spinach

  • 1 cup mushrooms (sliced)

  • 1 tomato (chopped)

  • 1 small onion (chopped)

  • 1 tsp olive oil

  • Salt & pepper

  • Optional: low-fat cheese

👩‍🍳 Instructions

  1. Sauté onion in olive oil, then add mushrooms, tomato & spinach.

  2. Beat eggs with salt & pepper.

  3. Pour over veggies, cover and cook on low heat for 5–7 minutes.

  4. Sprinkle cheese before folding if desired.

💡 Add herbs like parsley or paprika for flavor.
