Spinach, Mushroom & Tomato Omelet
🍳 Ingredients
4 eggs
1 cup spinach
1 cup mushrooms (sliced)
1 tomato (chopped)
1 small onion (chopped)
1 tsp olive oil
Salt & pepper
Optional: low-fat cheese
👩🍳 Instructions
Sauté onion in olive oil, then add mushrooms, tomato & spinach.
Beat eggs with salt & pepper.
Pour over veggies, cover and cook on low heat for 5–7 minutes.
Sprinkle cheese before folding if desired.
💡 Add herbs like parsley or paprika for flavor.
